Apple Bacon Galette
Adapted From Food Network Magazine
6 slices bacon
1 ½ cups plus 1 tbsp flour, plus more for dusting
½ cup sugar
5 tbsp cold butter
4 apples
1 tbsp fresh lemon juice
¼ tsp cinnamon
Maple syrup, for brushing
1. Cook the bacon until golden but still soft, about 6 minutes. Remove to paper towels. Reserve a tbsp of the fat in a small bowl. Refrigerate until cold, approx 15 min.
2. Mince the bacon.
3. Make dough using bacon, 1 ½ cups flour, and 2 tbsp sugar. Add the chipped bacon drippings and the butter and work the dough until it is the size of frozen peas. Drizzle in approx 4 tbsp cold water and work the dough so that it comes together. Chill the dough for 1 hour.
4. Roll out the dough between 2 sheets of lightly floured parchment paper or wax paper.
5. Preheat the oven to 375.
6. Make the filling: peel the apples and slice ¼ inch thick.
7. Toss apples with lemon juice, cinnamon, 3 tbsp sugar, and 1 tbsp flour.
8. Arrange the apples in the middle of the dough, leaving a border.
9. Fold the edge of the dough around the filling, pleating as needed.
10. Cut the remaining 4 slices of bacon into bite size pieces and sprinkle over the filling.
11. Sprinkling 3 tbsp sugar over the whole galette.
12. Bake until the apples are tender and the crust is golden brown, approx 50 minutes.
