In bowl #1, combine:
1 ½ cups flour
1 cup sugar
1/3 cup cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 apple - peeled, cored, and cubed
In bowl #2, combine:
½ cup milk
½ cup oil
1 tablespoon vinegar
2 tablespoons vanilla
½ cup coffee
Then combine 2 bowls.
Grease cupcake tins or cake pans. Pour in batter so pans are halfway full – this batter puffs up a lot.
Bake at 375 degrees. For mini cupcakes, check after 10 minutes. Regular sized cupcakes will take 15 to 25 minutes.
To assemble:
Spread some sort of frosting or whipped cream on a piece of cake, then add cut strawberries, then top with another piece of cake. Enjoy immediately!
