Ready for the easiest and biggest bang-for-your-buck recipe ever?!!!

This is inspired by egg-free mayo, but it is far, far better than mayo. It is a caramelized onion sandwich spread that defies description!!
You will need...
2 yellow onions
1 tbsp butter
2 tbsp olive oil
Generous pinch of salt
Slice the onions thinly and then slice in half so they are half moon shaped.
Heat up the butter and oil over medium low heat in a small pot. It will look like a lot of butter. It is. But this is caramelizing we are doing here :) ! So, once the butter is bubbling, add the onions and stir. Wait for them to cook down for about 3 minutes, then stir again so they all become submerged in the oil and butter mixture. Generously salt them. Let cook (still on medium low) for 30 to 40 minutes until they have completely softened and become caramelized, see-through with browned spots.
While warm, spread on sandwiches, use to top burgers, or use in potato salad.
Variations of this recipe appeared in the burger post and the potato salad post, but this better-than-mayo deserves its very own spot in its very own post. That's just how awesome it is!
So if you can't eat eggs and soy, here is an alternative to mayo and vegan mayo that will make your sandwiches sing. "The hills are alive with the smell of caramelized onions!" Just kidding.
