Carrot Bread
Ingredients:
1 cup sugar
3/4 cup oil (NOT extra virgin olive oil - must be a mostly flavorless oil such as light olive oil or canola)
1/2 cup milk
1 1/2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 cup grated carrots
Directions:
- Grate the carrots.
- Mix flour, sugar, baking powder, baking soda, and cinnamon.
- Mix in oil and milk.
- Stir in carrots until well combined.
- Pour into loaf pan.
- Bake 375 degrees for an absolute minimum of 45 minutes, and more like an hour. After 45 minutes, check every 5 minutes to catch it when it's cooked through before it dries out.
