You will need...
your preferred pesto
1 lb of pasta shells
half a package of mushrooms
your preferred cheese, cut into thick slices
What we did for our fancy pesto recipe:
-Cut off the stems, then chop 1 bunch of parsley.
-Pick 8 basil leaves from basil plant.
-Crush 3 cloves of garlic, then chop.
-Grate 1/4 cup packed parmesan cheese.
-Add 1/4 cup of good olive oil to blender.
-Add everything else to blender and blend until complete. You will need to stir in between blending. If it's not blending, add a bit more oil. This makes a chunky pesto.
Preheat oven to 350. This is a great time to throw in any veggies to roast, such as baby carrots. We did about 3/4 of a small package of baby carrots this evening.
Clean and slice mushrooms.
Cook pasta to al dente according to package directions. Drain immediately and let sit in strainer for a moment while preparing casserole dish.
Cover the bottom of a casserole dish with a layer of pesto, then add the pasta, then top with the rest of the pesto and mix til it's a homogeneous mixture. If you're having trouble getting the pesto out of the blender, add a tiny bit of cold water, swoosh, and then pour it all out in one fell swoop. Add mushrooms and mix again.
Top with slices of your preferred cheese.
Bake uncovered for 10 minutes so the cheese melts and the flavors marry. Buon appetito!
From start to finish with making our own pesto and waiting (for an age) for the water to boil, this meal took 40 minutes to get on the table.
