This is the Garlic-Scented Red Bliss Potato Salad, Adapted by Alison from Robert Irvine's Cookbook
Ingredients for the potato salad:
1 whole head of garlic
1 tbsp olive oil
1 lb small red bliss potatoes
1 onion, diced
Salt and pepper
For the dressing:
Juice of 1 lemon
1 clove garlic
1 tbsp honey
1 tsp salt
¼ tsp pepper
¾ cup olive oil
Directions:
Preheat oven to 400 degrees F.
Slice root end off of garlic and turn it upside-down, wrapping in aluminum foil so the cut end stands upright in the oven. Pour the oil on the garlic so it slips between the skin and the cloves, and enclose it in the foil.
Roast until tender and sweet, about 35 to 50 minutes.
Meanwhile: Saute the onion until sweated and cooked through.
Scrub the potatoes. Cut in ¼ inch disks and boil until just tender. Drain, then rinse in cold water to stop the cooking process.
Squeeze the garlic cloves into a large bowl and mash them.
Gently fold in potatoes and onions. Add enough dressing to coat. (It may not need all of the dressing.)
Directions for the dressing:
Juice the lemon.
Mince the garlic.
Combine everything.
Optional: Heat over the stove so the garlic is a bit cooked and the dressing flavors meld more.
The longer the dressing sits, the more flavorful it will be.
