Ingredients:
1 cup Lactaid milk
1 cup water
1 stick melted butter
2 tbsp brown sugar
4 tbsp maple syrup
2 cups flour
½ tsp salt
Directions:
In a large mixing bowl, blend all of the ingredients.
Cover and chill the mixture for 2 hours.
Lightly grease a 5 to 6 inch skillet, non-stick if possible, with a pat of butter. Heat the skillet until hot over medium heat. Pour a scant ladle-full of batter into the pan. Swirl to make the batter cover the skillet's bottom. Cook until golden and starting to brown, flip, and cook on the other side.
Enjoy with fruit and whipped cream or mascarpone cheese. Chocolate chips are a nice addition to that, too!
